I am forever searching for something I give S for breakfast that’s reasonably healthy, but not too messy. I hit the jackpot when I came up with these apple, oat and raisin pancakes; they taste good, they’re tasty and they’re easy to make.

Ingredients

  • 100g plain flour
  • 100g porridge oats
  • 1tsp baking powder
  • 1tsp cinnamon
  • a handful of raisins
  • 1tbsp ground flax seeds (optional)
  • 2 eggs
  • 250ml coconut milk
  • 1tbsp oil
  • a good squirt of runny honey (optional)
  • 6tbsp stewed apple (or you could use a pouch of baby food, or chop a normal apple into small pieces)

directions

  • Sieve the flour with the baking powder, then add the other dry ingredients.
  • Add wet ingredients and whisk until everything is combined.
  • Add a little oil to a hot pan, then drop spoonfuls of batter into the pan.
  • When the pancakes start to form little bubbles around the outside, flip them over and cook the other side.

This batter makes around 12 small pancakes. The good thing is that they also taste good cold, and you can freeze them and just pop them into the toaster to defrost/heat up. 

I freeze them in takeaway containers with a sheet of greaseproof containers between them to keep them from sticking together.
